Menu Engineering Calculator
Menu engineering compares how often each item sells with how much profit it makes. Enter a few weeks of sales for each item in one menu section, and the calculator sorts them into four groups.
| Item | Number sold | Menu price ($) | Ingredient cost ($) | Menu mix | Profit per plate | Group |
|---|---|---|---|---|---|---|
How the groups are worked out
An item counts as popular if its share of sales is at least 70% of an equal share. With 10 items an equal share is 10%, so the line is 7%. An item counts as high profit if its profit per plate is at or above the average profit per plate across everything sold. This is the method Kasavana and Smith published in 1982.
Compare items within one section, such as mains, not across the whole menu.
